down Kuhio Highway, and this time a bright orange sign with a
Kokopelli (a humpbacked, flute-playing fertility deity) caught our
eye. Housed in a deep-blue structure that looks like a beach cot-
tage, Kalypso Island Bar & Grill beckons with its outdoor porch
seating, bamboo bar, and self-proclaimed “Coldest Beer on the
North Shore.”
It’s not happy hour without something to munch on, so Christian
and I shared a huge platter of macho nachos: fresh tortilla chips
piled high with black beans, cheese, olives, tomatoes, jalapenos,
green onions, sour cream, and your choice of meat or seafood.
Being in Hawaii, we ordered it topped with succulent Hawaiian
kalua
pig. Kalua is the Hawaiian word describing the method of
slow cooking in a Hawaiian
imu
, or underground steam oven, which
makes for a smoky, tender meat. The platter was so big, it became
our dinner. We washed it all down with some hoppy IPAs from
Oregon’s Deschutes Brewery.
Feeling full, we walked off our meal with a shopping excursion
through Ching Young Village. Located at the corner of Kuhio Highway
and Aku Road, the popular retail center includes a shave-ice shop
